First of all, your plan will probably shorten the life of your roofing, because you will be trapping a layer of water against the roofing, and the roofing will be perpetually damp.
Second, when the carpeting deteriorates, you won't be able to remove it without damaging or destroying the roofing.
That said, if you want to proceed with your plan, the traditional adhesive for roll roofing or asphalt shingles is roofing cement. You can buy it by the 5-gallon pail, or in cartridges like caulk.
