Best material for door window

Hey all,

im building set of 4’x8’ carriage doors. What materials should  I be using to build the windows? I’ve seen corrugated greenhouse plastic used, as well as plexiglass etc.

never built a window before so any advice would be helpful. I’m assuming double pane is good for mitigating condensation and acting as an air break between interior exterior. What’s the most energy efficient method?

the core will be poplar, with the interior face 1/4” birch ply, exterior face will be white oak. I’m packing the core with 1 1/2”XPS foam board between the rails below the window.
