Can I use EPS foam for vented ceiling?

Recently bought a house with room above trusses that were not finished. I am now finishing them and plan to do a vented ceiling as some of the ceiling is vaulted and shares it’s framing with the roof. I plan on doing continuous vents from the soffit to The ridge. To make the vents and insulate Can I use EPS foam in a “stack of pancakes” method Inside the entire rafter cavity or should I switch to mineral wool before the Sheetrock? Also, would air barrier/vapor retarder such as MemBrain be Required?
