Central Florida Home remodel

We are begining to remodel a 1970’s home in central Florida. The home was hand built by my father. It is a concrete block wall, slab on grade home. Most exterior walls finished inside with paneling or wallpaper directly on block. For the walls with paneling It has EPS between the furring strips and I plan on drywalling directly over this. The other walls are basically bare block.
What do you feel would be the best insulated way to go?
Do the same as they did in the late 70’s?
