Sealant for overlapped flashing Joint

All sorts of sealant types will say ‘metal’ as a material it adheres to… my question is which is the way to go when you want to seal an overlapped joint, such as a z flashing over water table or ridge cap, or overlapped standing seam panels – joints of those nature. I have heard novaflex silicone metal roof sealant made by novagard is great for this…

If you have proper slope on the flat part of a zflashing (~100° or so), do you even need to seal/caulk your overlap joints? Edit: flashing will be white as opposed to galvanized or another color. I’m mostly asking about siding flashing application in this question, but I figured anything good enough for a ridge cap overlap or roof panel overlap would be good enough for z flash overlap on siding too. thanks again
