Replacing sheet metal (pan?) flashing on roof

Hey guys. Back with the horrible roof design that needs repaired. We are getting a leak somewhere in this terrible area of our roof. I tried to upload a video showing how the roof ties together, but the site wouldn’t let me, so here’s a series of screen shots showing how the water runs down the roof. You can see there’s a small downspout, step flashing, a little cubby (with what I’ve heard referred to as “pan” flashing), more step flashing, kickout flashing and finally gutter. I’m so hesitant to let a roofer dig into this because it’s so complex. First, does anyone know of a roofer in the Kansas City area who could properly tackle this? Second, is that horizontal square of sheet metal called a pan flashing? I’ve been searching for information on pan flashings on this web site and not finding much. Perhaps it has another name? Third, the roofer we’ve spoken to said they don’t use sheet metal in spots like this any longer (?) but rather use “roll roofing up wall and up roof, use ice and water shield, change pitch or modify it.” I asked if they would use metal, and they said we’d need to find a sheet metal fabricator and pay for that. Can someone speak to what’s best practice here, and possibly point me toward some further reading?

This is a good article on flashing a dormer: https://www.finehomebuilding.com/project-guides/roofing/four-steps-to-flash-a-dormer. I've repaired several roofs that were leaking in that spot and it was always a flashing detail, sometimes with improperly installed shingles at the valley as well.
I think you need to zoom out a little, hard to mentally knit the closeups together
I prefer metal personally, and it looks like, I think, someone tried to do it right, step flashing, kickout, siding trimmed back
At the end of the day, get a professional to design the flashing strategy and the roofer to implement
