    Tom,
There are restrictions on the use of a commercial range in a residence. But there are no special requirements for gas kitchen ranges that only apply to homes insulated with spray foam.

Tom: There are often air quality concerns associated with tight homes and gas appliances. You need to think about mechanical ventilation and make-up air, especially if you plan a powerful range hood fan to go with your big gas range.
Is it too late to think about induction?

    Tom,
If your question concerns range hood exhaust fans and makeup air issues, you should read this article: Makeup Air for Range Hoods.

    Tom,

Where are you located, and what type(s) of foam is your builder proposing? In warm climates, there are some issues with applying open cell foam to the underside of the roof sheathing, for example.
