Best insulation for steal building

We are at the frame phase of a metal building. 8” girts. The roof will be metal insulated panels. We are looking for the best way to insulate the walls. It is a shop/apartment. The climate is less than 50F for 308 days a year. High humidity. Typically above 60%. Heavy rain and snow.
The cladding will be metal sheeting. What is the best method of insulating to avoid condensation in the walls. How much doe thermal bridging affect efficiency?
This heating system will be electric/wood in floor radiant heat.
