Just curious if you can use zip R-3 on an 8/12 pitch roof in climate zone 3? If not what would be a good way to get a thermal break on the roof?

If not what would be a good way to get a thermal break on the roof?: Sandwich rigid foam between two layers of roof sheathing. Just Google: "exterior foam on roof" and you'll see a bunch of construction drawings.

These two article will explain most of what you need to know to install rigid insulation above roof sheathing. It's an excellent method, but there are some important details to get right, including the ratio of exterior to interior insulation. Here you go:
